Recipe of booklets stuffed with sobrasada, cheese and honey

Preparing simple dishes that suit us all at home, that serve the elderly and the little ones is a task that takes us away more time thinking, than later when it comes to carrying out our ideas. That's why when they gave me the idea of ​​these pig booklets stuffed with sobrasada, cheese and honey, I immediately got to work to put them into practice.

The result is a very comfortable dish, which we can even have prepared and frozen pending only frying it, to take it out when it suits us or when we want to prepare it for ours. The combination of flavors is much tastier and original than the classic San Jacobos So I recommend you try them as soon as possible.

Ingredients for 4 people

  • 4 pork loin booklets, 50 g of sobrasada (leftover), 4 slices of cream cheese for sandwich and 4 teaspoons of honey, flour, 1 egg and breadcrumbs

How to make booklets stuffed with sobrasada, cheese and honey

We ask the butcher to cut the pork loin booklets by cutting the slices two by two and without cutting them completely so that they are like booklets. At home, we hit them to make them finer and larger. Once stretched, we open them and fill each booklet with the cheese, so that it covers one of the two fillets that form the booklet.

Then, cover the cheese with a stick of sobrasada which in turn we stretch to form a thin layer that covers the surface and on the sobrasada, lightly spread a little honey, closing the booklet with the other tenderloin steak. We repeat this operation until all the fillets are finished. You can do more than you need, then freeze them after breaded.

To breach the booklets, we lightly salt them on the outside and pass them through flour, beaten egg and breadcrumbs, proceeding next or to fry them in very hot oil or to put them in packages to proceed to their freezing. Those of us who are going to fry will be better if we use very hot olive oil, letting them cook until they brown as you see in the cover image.

Be careful since the melted cheese keeps the temperature a lot and the filling can burn the little ones. It is better to let the stuffed booklets rest on absorbent paper towels so that while they cool, they release the excess oil from the frying.
