Recipes for back to school: goodbye to the industrial bakery

As a proposal for a healthy snack that is also perfectly suitable for a family breakfast today we propose this homemade sponge cake, healthy, spongy and full of flavor.

With 15 minutes of effort and another 45 of baking we will get a healthy product that the whole family will like, and that we can use - in addition to breakfast or snacks - to make individual cupcakes if we cut some slices and stack them after smearing them with fruit jam, for example.

Ingredients for 8 or 10 portions

  • 4 eggs, 200 grams of sugar, 200 grams of whipping cream, 180 grams of flour, 1 envelope of Royal type chemical yeast, 50 grams of butter and the zest of 1 orange or a lemon

How to make a homemade cake to say goodbye to the industrial bakery

We preheat the oven to 190ºC, disconnecting the fan if we have that possibility. With the butter, we grease the mold if it is metallic. (If you use a silicone mold you will not need to do this step, nor will you need the butter)

We separate the whites from the yolks. We beat the yolks with the sugar and the cream, with the help of some rods. We do it vigorously for two or three minutes. Add the flour and yeast and mix until we have a cream. We incorporate the zest of the orange giving a few turns so that it is distributed well.

In another bowl, beat the egg whites until they are about to snow. Two or three sets of two or three minutes each will suffice. When the whites are more or less firm, we add the contents of the bowl of the yolks to the whites, making it in several batches with small quantities and we mix it with enveloping movements so that the mixture is as fluffy as we can and does not get too low.

When we have all the dough ready, we pour it into the greased mold and bake for about 45 minutes, until we can put a wooden skewer on the cake and leave clean. We let the cake cool before eating it.
