Bimi is a variety of broccoli is considered a superfood and its flavor and texture are very delicate. It can be steamed or grilled and we already find it without difficulty in supermarkets and large stores. With some green asparagus and a bit of cooked lacon, look what a good dinner we have prepared.

Ingredients for two people

  • 4 sprigs of bimi, 12 wild asparagus, 100 g of cooked lacon, a tablespoon of virgin olive oil, 100 ml of water and a pinch of salt

How to make a sautéed bimi and asparagus for dinner

We start by very finely chopping the cooked lacon and browning it in the pan with a spoonful of extra virgin olive oil, which is going to be the only fat we will have on the plate. While browning, we cut the asparagus yolks and reserve them. The stems are chopped into small pieces and incorporated into the pan.

With the bimi, we cut the little trees or corsages, reserving the stalks to make other recipes such as vegetable purees and other preparations suitable for this time.

Add the bimi bouquets, add the 100 ml of water and a pinch of salt and raise the heat. When it starts to boil, cover the pan with the lid of a saucepan and let it cook for three or four minutes.

Finally, add the asparagus yolks, and sauté for another minute or two, serving immediately. The vegetable is at its point, with a radiant color That makes it very palatable.
